Beginner's Guide to Starting Seeds Indoors for Fall

Most gardeners think of seed starting as a spring activity. You set up your tray in February, get your tomatoes and peppers going under lights, and transplant them out when the weather warms up. But there is a second window of seed starting that most beginners never hear about, and in many ways it matters just as much as spring.
Starting seeds indoors for fall planting is one of the things that separates gardeners who have a productive fall season from those who end up with empty beds by September. Store-bought transplants for fall crops like broccoli, cauliflower, kale, and cabbage are almost impossible to find after June. If you want them, you grow them yourself. The good news is that the process is almost identical to spring seed starting, and this guide walks you through every step.
Why Starting Seeds for Fall Is Different
The timing runs in the opposite direction from spring. Instead of counting forward from your last frost date, you count backward from your first fall frost date.
Look up your average first frost date for your zip code. In North Texas, that is around mid-November. Once you have that date, you count backward by the number of weeks each crop needs to go from seed to transplant-ready seedling, plus the number of days the crop needs to mature after transplanting.
For example, broccoli takes about six to eight weeks from seed to transplant size. If your first frost is November 15, and broccoli needs 65 days to mature after transplanting, you count back 65 days from November 15 to get your transplant date, then back another six to eight weeks to get when to start your seeds. That typically puts fall broccoli seed starting in late June or early July for North Texas.
This timing feels counterintuitive because you are starting cool-season seeds during the hottest part of summer. You are starting broccoli in July so it can be ready to go into the ground in August or September, when soil temperature finally starts to become hospitable for cool-season crops. The indoor environment controls the conditions during those early weeks, which is exactly why starting indoors works so well for fall crops.
What to Start Indoors for Fall
Not everything needs to be started indoors for fall. Some crops do fine direct-sown into the bed. Here is how to think through it.
Start indoors, six to eight weeks before your fall transplant date: Broccoli, cauliflower, cabbage, Brussels sprouts, kale, and Swiss chard all benefit from being started indoors where you can control conditions during germination and early growth. These are the primary fall indoor starts.
Tomatoes and peppers for a fall crop also need to be started indoors. In Texas, gardeners start a second round of tomatoes and peppers indoors in June or early July to transplant in August for a fall harvest window.
Direct sow outdoors when soil temperatures cool: Lettuce, spinach, arugula, mustard, radishes, carrots, beets, and turnips all germinate quickly and do not need the head start that slower-growing brassicas require. Wait until your outdoor soil temperature drops below 85 degrees and direct sow these into the bed.
Step 1: Gather Your Supplies
You do not need a lot to start seeds successfully. Here is the complete list:

- Seed-starting mix, not potting soil or garden soil. Seed-starting mix is light, sterile, and well-draining. Garden soil compacts and potting mix is too dense for seeds.
- Seed trays or cell packs with drainage holes, or recycled clean containers with holes poked in the bottom
- A grow light. A sunny windowsill is rarely enough. Most windows provide only a fraction of the light intensity seedlings need, which leads to leggy, weak transplants. A basic LED grow light positioned two to four inches above the seedlings is the most reliable setup.
- A seedling heat mat. Seeds germinate sooner and more evenly with bottom heat. This is especially true for peppers and tomatoes.
- A spray bottle for gentle surface watering
- A thermometer if you want to monitor temperatures
- Labels and a permanent marker
You do not need expensive equipment. A single LED shop light, a basic seed tray, and a bag of seed-starting mix is all it takes to grow strong, healthy transplants.
Step 2: Fill Your Trays and Sow the Seeds
Moisten your seed-starting mix before filling the trays. Add water to the mix in a bowl or bucket and stir until it is evenly damp but not dripping. Dry mix will repel water and make it hard to keep seeds consistently moist in the early days.
Fill cells or containers to about a quarter inch from the top. Firm the mix gently with your fingertip so it is settled but not packed.
Sow two to three seeds per cell. This gives you a margin if some fail to germinate. You will thin later to one seedling per cell. Press seeds to the correct depth as listed on the seed packet. A common rule of thumb is to plant seeds at a depth roughly two times their diameter. Tiny seeds like kale and broccoli need barely any covering. Larger seeds need more depth.
Mist the surface gently with a spray bottle until evenly moist. Place a plastic dome or plastic wrap loosely over the tray to hold humidity during germination. This is one of the most practical tips you can follow: covered trays germinate more evenly, require less frequent watering during the vulnerable first days, and produce better results.
Step 3: Set Up Your Light and Heat
Place the covered tray on a heat mat. Set the grow light or shop light directly above the tray at about two to four inches from the surface. Even though seeds do not need light to germinate, you want the light in place and ready so you can turn it on the moment sprouts appear.
Set the light on a timer for 14 to 16 hours per day. Seedlings need consistent light exposure to develop properly. Without a timer, it is easy to forget to turn the light off and on at consistent times.
Keep the heat mat running continuously until germination. Once sprouts appear, remove the plastic dome, lower the light so it stays two to four inches above the tops of the seedlings as they grow, and leave the heat mat running until the seedlings are well established.
Check the tray daily during germination and mist if the surface shows any signs of drying. After germination, water when the top of the mix feels dry to the touch, not on a schedule.
Step 4: Thin and Feed Your Seedlings
Once seedlings have their first true leaves, which are the second set of leaves that appear after the initial seed leaves, thin to one seedling per cell. Cut the extras at soil level with small scissors rather than pulling them, which can disturb the roots of the seedling you are keeping.
Begin feeding with a diluted liquid fertilizer at half strength once true leaves appear. Seed-starting mix contains little to no nutrients, so seedlings depend on supplemental feeding after the first week or two. A balanced liquid fertilizer applied every seven to ten days keeps seedlings growing strong without pushing them too fast.
Step 5: Harden Off Before Transplanting
Moving seedlings grown in controlled indoor conditions directly into outdoor heat and sun is a shock that causes wilting and sometimes kills plants that would have been perfectly healthy with a gradual transition. Hardening off is the process of acclimating them, and it takes about one to two weeks.
Start by setting seedlings outside in a shaded, sheltered spot for a few hours in the morning. Bring them back in before the afternoon heat peaks. Each day, increase the time outside and gradually introduce more sun exposure. By the end of the second week, they should be able to handle the outdoor conditions where they will be planted.
Plant outdoors in the late afternoon or evening, never at noon on a hot day. Water thoroughly at transplanting and keep consistent moisture for the first week while they establish.
Common Mistakes to Avoid
Sowing seeds too early. A common mistake is to start seeds too far in advance, resulting in tall, root-bound plants that never perform well in the garden. Match your sowing date to the actual days the crop needs to reach transplant size.
Using the wrong growing medium. Garden soil and potting mix both compact in seed trays and limit root development. Only seed-starting mix belongs in a seed tray.
Not thinning to one seedling per cell. Leaving multiple seedlings in a single cell causes root competition and produces weak, crowded plants that transplant poorly.
Inconsistent light leading to leggy seedlings. Seedlings that stretch toward a window are not getting enough light. They grow tall and thin, develop weak stems, and are much more likely to fail after transplanting. Keep the grow light two to four inches above the tops of the seedlings and adjust it upward as they grow.
Skipping the hardening-off period. It feels like an unnecessary extra step right until you watch a flat of healthy seedlings wilt and struggle after being moved outside without it.
Beginner Tips That Actually Help
Write the crop name and sowing date on a label and put it in the tray the day you sow. You will not remember what is in each cell once they all look like small green seedlings.
Keep a spray bottle filled with water at your seed-starting station. It removes the friction of getting the right tool for daily misting and makes consistent moisture much easier to maintain.
If you are starting seeds in the heat of summer, the indoor room temperature may be higher than ideal for some cool-season crops. Broccoli and cabbage actually germinate at a wider range of temperatures, so this is usually fine. Keep the heat mat in place until germination and then trust the indoor conditions.
Start more than you need. Germination is never 100 percent. Sowing extra gives you insurance and lets you choose the strongest seedlings when it comes time to thin and transplant.
